Marinades Rub and Marinade For Eight-Bone Pork Roast

  • 1/4 cup unsalted butter, softened
  • 2 tablespoons red port wine
  • 2 tablespoons cane syrup
  • 2 tablespoons muscadine jelly
  • 1/4 cup minced garlic
  • 1 tablespoon chopped fresh tarragon
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh rosemarry
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup chicken broth
  • 1 roast 6-8 pounds
In small bowl combine the butter, port, syrup and jelly
Spread mixture of roast
In second bowl combine the remaining ingredients
Add the broth to the roasting pan for the grill or smoker
cook at 350 for 45 minutes or until the internal temperature reaches 145 for medium rare
