You can use any fish, but I like trout. Mix 1/2 tbsp crushed peppercorn, 1 tsp chili flakes, 1/2 tbsp brown sugar, 1 tbsp garlic powder, 1 tsp coriander, 1 tsp thyme, 1 bay leaf, 1/2 tsp salt, and 1/2 tsp olive oil in bowl. Rub into fish and leave in fridge for at least 2 hours. Grill and enjoy. I like spice on my fish!
