Grilled Pork Satay

  • .5 cup unsweetened coconut milk
  • 2 large garlic cloves minced
  • 2 tablespoons finely chopped cilantro
  • 2 tablespoons peanut oil
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon fresh ground black pepper
  • 1 pound lean pork loin, sliced 1/4 inch thick and cut into 3x3/4 inch strips
  • lettuce leaves
combine first seven ingredients
pour into large freezer bag and add pork pieces
refrigerate at least 2 hours or as long as overnight
Thread strips on skewers and grill over medium hot fire about 3 minutes per skewer depending on the thickness of the strips
server with lettuce leaves.
