I caught a good deal on eggplants at Kroger last week, and totally forgot about them until I saw the post about the pork burgers. I guess the red onions made me think about the eggplants, and thankfully so. I hate when my produce goes bad because I forget about it.

I had planned to slice them, brush them with a little olive oil, and grill them, but it's already raining, and we've got severe weather heading our way, so I guess I'll have to cook them on the stove top. I'll save some for meatless Friday, since it's Lent.


Lucky you Diane! I love to get good deals because they allow me to prepare great meals pretty cheap. :)
