Peppers are great for adding spice and crunch to meals. But when you grill a pepper it completely changes its personality. It becomes rich, savory and smoky. IGrilling peppers is easy and there are a few ways to go about it.
The easiest way to grill a red bell pepper is to wash it well. Then dry it with a paper towel. Brush it lightly with some oil. Then put it on the grill. The skin will begin to turn black in a few minutes. But don’t panic, that’s exactly what you want to happen. Turn the peppers to the other side and char them all the way around. Then put them in a plastic or paper bag and close the bag. The steam from the peppers will separate the skins so that when you take them out after a few minutes the skin will come way by just pulling it with your hands. You might be tempted to rinse them under water, but don’t do it. Any tiny bit of skin that remains just adds to the smoky flavor. Open up the pepper by cutting it in half. Discard the seeds, membranes, and stem. Now you can use the pepper halves to serve other vegetables, slice them for salads or to add to grilled meat. You can also drizzle them with olive oil and a sprinkling of sea salt to make a side dish that will complement your grilled meat.
Another way to use grilled peppers is to cut up onions and green and red bell peppers. Toss these with olive oil and salt and place them on a vegetable grill pan. They will cook quickly. Since these won’t have the skin removed don’t let the skins get too dark. Remove them from the grill and serve in tortillas with grilled meat, as a side dish or on a salad.
Peppers are just begging to be stuffed. Any color of bell pepper works for this. To make a healthy side dish cut off the tops and clean out the seeds and white membranes. Stuff them with cooked rice, cheese, onions, and olives. Put the tops back on. Place them on the grill and close the lid. When the cheese has melted and the peppers have just begun to soften take them off of the grill and cover with foil to finish the cooking on a plate.
If you really like it spicy then grill some hot peppers. Jalapenos are great just cleaned rubbed with oil and popped right on the grill. Take them off before they get too dark and when they have softened. If you really want to wow your family and friends then cut a slit in a fresh jalapeno stuff it with cheese and wrap it with bacon. Secure it with a toothpick. Put it on the grill until the bacon is cooked. You can never make enough of these jalapeno poppers.
